A couple weeks ago, I jumped on the truck and joined my husband on a smallbatch delivery. We were delivering to the raddest couple in all of sonoma county. Gene and Eartha are pretty amazing people, and their place is by far one of our favorite places to visit. Even though we are only ever there for a short period of time, we love any little bit we can get. We usually exchange random stories, get lost in their yard, and always leave feeling incredibly happy. Most often leave with some wonderful gift from Gene and Eartha...I'm telling you, they really are the best people! On this last visit, the generosity level went way up by these two, we left with an awesome meat grinder(yes! chorizo and sausages coming right up) and tons of meyer lemons. Inspired by the meyer lemons we stopped by tokyo fish market and grabbed a couple swordfish steaks for dinner. The rest is all in my head still, all the warm fuzzy memories of country life in a town called Penngrove. Mmmmmm. Perma-smile.
Rosemary meyer lemon swordfish packets
what you need:
olive oil
4 sprigs of rosemary
1 or 2 lemons cut into thin slices
4 cloves of garlic
swordfish steaks or halibut
what to do:
turn oven on to 450 degrees
1.cut a couple 12 inch squares of foil, fold them diagonally to make a crease then unfold.
2.evenly divide rosemary, lemon and garlic among the squares, placing them on one side of the crease, closest to it. top with fish of choice in this case swordfish. drizzle with olive oil and season with salt and pepper.
3.wrap the fish packets by folding along the crease and rolling edges together. starting at the left and working around the right.
4.place each packet onto a baking sheet, bake for 10 minutes. serve with your choice of veggie or rice or salad. we roasted some broccoli that was given to us by friends from green hearts family farm(we know great people!) and that's it. easiest dinner ever.
