chocolate pudding




I get chocolate cravings. Duh, I am a woman after all. The other night after dinner and while pretending to watch boxing with el esposo, I rushed to the kitchen with an idea. A chocolate pudding idea! I knew I had everything to make it from scratch, but wasn't sure I had the patience to let it cool off before I went in for the kill. Here's what I whipped up in no time. 

what you need:


  • 1/2 cup white sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1/4 cup cornstarch(i used rumford brand corn starch that's made from non-genetically modified corn) 
  • 1/8 teaspoon salt
  • 2 3/4 cups milk
  • 2 tablespoons margarine or butter
  • 1 teaspoon vanilla extract

what to do:

In a saucepan, stir together sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in milk. Bring to a boil, and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon. Remove from heat, and stir in margarine and vanilla. Be cool, let it cool while you go back to watching TV or chill in refrigerator. I sprinkled mine with a tad bit of fresh cinnamon.
