Here's a quick and easy summer pasta. When I say quick and easy, I really mean it. We grow our own basil and I love making anything with basil because of this. We're growing our own tomatoes as well, but they're not quite ready for picking just yet, so I had to buy some this time. Pop open a bottle of wine and relax, the brie does all the work for ya!
What you need:
2 ounces orecchiette pasta
2 large tomatoes, chopped
4 ounces brie cheese, sliced
1 tablespoon minced garlic
1/4 cup extra-virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup fresh basil leaves, chopped
what to do:
Cook pasta according to package directions. Drain and return to pot. Add remaining ingredients and stir to combine. The briw will melt into every little orecchiette pocket making it nice and gooey. The tomatoes, garlic and basil give it bite and flavor. And that's it...Supa dupa easy!
